Recipe – Mom’s Potato Bhajias

RECIPE  –  Mom’s Potato Bhajia

Ingredients:

–  4 or 5 medium potatoes

For the batter

– 2 cups Gram flour

– 1 cup ( or more) warm water

– 1 1/4 teaspoon salt

– 1/2  teaspoon chili powder   (or pepper)

– 1 teaspoon grated ginger

–  2 tablespoon green cilantro ( coriander )  – chopped   

    or  1 tablespoon   dry cilantro  flax   

– 1/2 teaspoon sugar

– 1/2 teaspoon eno  or baking soda

– 2 tablespoon cooking oil     

Method :

– Peel potatoes

– Clean all the dents

– wash them

–  in a bowl – cut potatoes into thin slices

–  wash again

– Drain all water &  spread these on a clean towel

Batter :                                                                  

In a bowl 

–  mix the gram  flour, salt , chili powder ( or  pepper) , baking soda  (eno) , ginger , sugar ,  and  cilantro 

–  Mix with fork  &  then mix evenly oil into the flour

–  Add warm water – mix with  a spoon or hand.

(  Batter should look like pancake  batter )

If dry , add more water

Then 

  Lay out in an  organised way  – batter , potato slices , frying ladle (pan) on the counter near the cooking stove .

– Put enough cooking oil in  a frying pan

– Heat oil on high

– Test with  a drop of batter  – if bubbly reduce heat to medium

– Put a few potato slices into the batter

( cover/coat   each slice with batter )

– Drop one slice at a time into the frying pan    —   careful when placing the slice in the frying pan

Put  enough slices in the frying pan – to cover the surface of the oil

– When less bubble appears – turn bhajias with  a fork  individually – one  at a time.

OR  if confident – can turn all the bhajias with a ladle

Fry both sides  evenly.

– Remove with  a ladle  –   drain   and then place them in a dish – prepared/lined  with a couple of paper towels  – to drain extra oil.

Enjoy

Can eat with Ketchup or green chutney.
